RECIPE: Glow Getter Fig Salad

This salad is destined to leave you feeling vibrant inside and out.
Filled with fibre and antioxidants, your skin and gut will be thanking you!

Figs are beautiful to nourish and tone the intestines because of their high fibre content. The fibre they provide also has prebiotic properties, feeding the gut bacteria and promoting a healthy gut environment. They're also rich in protective plant compounds called polyphenols - amazing compounds that have protective antioxidant properties, meaning they help prevent oxygen from reacting with other chemicals and causing damage to cells and tissues. Brazil nuts are rich in selenium, with just one nut containing 96 mcg, or 175% of the RDI. For perspective most other nuts provide less than 1 mcg, on average. Serves 2 big serves / 4 side serves

Ingredients

Dressing

⁃ 1/2 cup Extra virgin olive oil

⁃ 1/4 cup Balsamic vinegar

⁃ 1 tsp I am Gaia Superfeast Blend

⁃ 1 tsp Maple syrup

⁃ 1 tbsp Wholegrain mustard

⁃ Juice from 1/2 lemon

⁃ Pinch of Salt

Salad

⁃ 1 bag of Rocket or mesclun

⁃ 5 Figs, halved or quartered

⁃ Handful of Brazil nuts, roughly chopped

⁃ 12 Inca berries (or goji berries)

⁃ 2-3 cubes of Goats cheese / Cashew cheese

⁃ 2 Radish, thinly sliced

Method

1. In a jar place all the dressing ingredients and give it a good shake until combined. Pour into your favourite jug.

2. Create your salad by prepping all the ingredients, washing, slicing chopping etc.

3. Layer the rocket on the bottom and place all the other ingredients on top. Gently break up the goats cheese/cashew cheese and scatter.

4. Pour over the salad dressing and enjoy alongside some roasted sweet potatoes and your favourite source of protein.
